BBQ Chicken Flatbreads - Easy, Flavor-Packed Weeknight Dinner

Ingredients
  

  • Flatbreads or naan: 2–4 pieces, depending on size
  • Cooked chicken: 2 cups, shredded (rotisserie works great)
  • BBQ sauce: 1/2 to 3/4 cup, plus extra for drizzling
  • Mozzarella cheese: 1 cup, shredded
  • Cheddar cheese: 1 cup, shredded
  • Red onion: 1/2 medium, thinly sliced
  • Cilantro: Small handful, chopped
  • Olive oil: 1–2 teaspoons
  • Garlic powder: 1/2 teaspoon (optional)
  • Smoked paprika: 1/2 teaspoon (optional, boosts smoky flavor)
  • Jalapeño: 1, thinly sliced (optional, for heat)
  • Lime: 1 (optional, for a finishing squeeze)
  • Salt and black pepper: To taste

Method
 

  1. Preheat your oven. Set it to 425°F (220°C). If you have a pizza stone or baking steel, preheat that too. Hot surface equals crisp flatbread.
  2. Prep the chicken. Toss shredded chicken with 1/4 to 1/3 cup BBQ sauce, a pinch of salt, black pepper, and smoked paprika if using. You want it coated but not dripping.
  3. Brush the flatbreads. Lightly brush one side with olive oil and sprinkle a little garlic powder. This helps with browning and flavor.
  4. Sauce the base. Spread a thin layer of BBQ sauce over the oiled side. Don’t overdo it—too much sauce can make the center soggy.
  5. Add cheese. Sprinkle a mix of mozzarella and cheddar, saving a little for the top. Cheese under and over the chicken helps everything stick.
  6. Top with chicken and onions. Scatter the BBQ chicken evenly. Add thin slices of red onion and, if you like heat, a few jalapeño rounds.
  7. Finish with more cheese. A light blanket of cheese locks the toppings in and gives a bubbly, golden finish.
  8. Bake. Slide onto the hot stone or a parchment-lined sheet. Bake 8–12 minutes, until the edges are crisp and the cheese is melted and golden in spots.
  9. Freshen it up. Pull from the oven and let it sit 2 minutes. Sprinkle cilantro, add a squeeze of lime, and drizzle a tiny bit more BBQ sauce if you want.
  10. Slice and serve. Cut into wedges and serve hot. A simple side salad balances the richness nicely.
