Blend or mash the blueberries. For a smoother pudding, blend half the blueberries with the milk, protein powder, vanilla, and salt until purple and creamy. For a chunkier texture, lightly mash the blueberries with a fork and keep the milk mixture separate.
Whisk the base. In a mixing bowl or large jar, whisk the milk, protein powder, vanilla, sweetener, and salt until no lumps remain.
If using Greek yogurt, whisk it in now for a thicker, creamier result.
Add chia seeds. Stir in the chia seeds until evenly dispersed. If you blended the blueberries, add that mixture now. If not, fold in the mashed blueberries.
Rest and stir. Let the mixture sit for 10 minutes, then give it a thorough stir to break up any clumps.
This step helps the chia swell evenly.
Chill. Cover and refrigerate for at least 2 hours, ideally overnight. The pudding will thicken as the chia seeds absorb liquid.
Adjust and serve. In the morning, check consistency. If it’s too thick, stir in a splash of milk.
Taste and add more sweetener if needed. Top with remaining blueberries and your favorite crunchy extras.
