High Protein Blueberry Protein Balls - Easy, No-Bake Snack

Ingredients
  

  • 1 1/2 cups rolled oats (use certified gluten-free if needed)
  • 1/2 cup vanilla protein powder (whey or plant-based)
  • 1/2 cup natural almond butter (or peanut butter, cashew butter)
  • 1/3 cup honey or pure maple syrup
  • 1/4 cup ground flaxseed (or chia seeds)
  • 2–3 tablespoons unsweetened shredded coconut (optional, for texture)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1–2 tablespoons milk (dairy or non-dairy), as needed for moisture
  • 1/2 cup dried blueberries (see notes for fresh or frozen)
  • 1 teaspoon lemon zest (optional, for a bright, bakery-style note)

Method
 

  1. Mix the dry base. In a large bowl, combine rolled oats, protein powder, ground flaxseed, shredded coconut (if using), and salt. Stir to evenly distribute the powders and seeds.
  2. Stir in the wet ingredients. Add almond butter, honey or maple syrup, vanilla extract, and lemon zest. Use a sturdy spatula or clean hands to mix. The mixture should look crumbly but start to hold when pressed.
  3. Adjust the moisture. If the mixture is too dry to clump, add milk 1 teaspoon at a time. If it’s too sticky, sprinkle in a bit more oats or protein powder. You’re aiming for a dough that holds together without sticking to your hands.
  4. Fold in blueberries. Gently mix in the dried blueberries so they’re spread evenly throughout. Be careful not to crush them too much.
  5. Chill the dough. Cover the bowl and chill for 15–20 minutes. This makes rolling cleaner and helps the oats hydrate slightly.
  6. Roll into balls. Scoop about 1 heaping tablespoon per ball and roll between your palms. You should get 18–22 balls, depending on size.
  7. Optional coatings. For a bakery finish, roll some balls in extra shredded coconut or a light dusting of finely ground oats.
  8. Set and store. Place the balls on a parchment-lined tray and refrigerate for 30 minutes to set, then transfer to an airtight container.
