Prep the lemon. Wash and dry the lemon.
Zest half of it with a fine grater, avoiding the bitter white pith. Squeeze 1–2 teaspoons of juice.
Mix the base. In a bowl, whisk the Greek yogurt with the protein powder until smooth. Add the lemon juice, vanilla extract, and a tiny pinch of salt.
Taste and adjust.
Sweeten lightly. Drizzle in honey or maple syrup if you want it sweeter. Start small; the blueberries and vanilla may be enough.
Add texture. Stir in chia seeds or ground flax. They thicken the bowl slightly and add fiber.
Top with blueberries. Use fresh for a juicy bite, or thaw frozen berries briefly for a compote-like vibe.
If using frozen, blot excess liquid.
Finish with crunch. Sprinkle chopped nuts and a little lemon zest on top. Add any optional toppings like granola or coconut flakes.
Serve right away. Enjoy immediately for the best texture and brightness.
