Keto Berry Cream Parfaits – A Light, Velvety Treat with Fresh Berries

Ingredients
  

  • 1 cup heavy whipping cream (or coconut cream for dairy-free)
  • 4 oz full-fat cream cheese, softened
  • 2–3 tablespoons powdered erythritol or allulose (to taste)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest (optional, for brightness)
  • 1 cup fresh berries: raspberries, blackberries, blueberries, or sliced strawberries
  • 1–2 tablespoons chia seeds or finely chopped nuts (optional, for crunch)
  • Pinch of sea salt
  • Fresh mint leaves, for garnish (optional)

Method
 

  1. Prep the cream cheese: Let the cream cheese soften at room temperature for 20–30 minutes. This helps create a smooth, lump-free cream.
  2. Whip the cream: In a chilled bowl, beat the heavy cream with a hand mixer until soft peaks form. Don’t overbeat yet.
  3. Sweeten and flavor: Add the powdered sweetener, vanilla, lemon zest, and a pinch of sea salt. Beat again until medium to stiff peaks form.
  4. Blend in the cream cheese: In a separate bowl, whisk the softened cream cheese until smooth. Fold it gently into the whipped cream until fully combined and fluffy.
  5. Taste and adjust: Check sweetness and add a little more sweetener if needed. If you prefer a looser texture, fold in 1–2 tablespoons of unsweetened almond milk.
  6. Prep the berries: Rinse and pat dry. If using strawberries, slice them thin. Toss with a tiny squeeze of lemon juice if you want extra brightness.
  7. Layer the parfaits: In small glasses or jars, add a spoonful of cream, a layer of berries, and a sprinkle of chia seeds or nuts. Repeat layers until the glass is full.
  8. Chill (optional): For a firmer set and deeper flavor, chill for 30–60 minutes. Otherwise, serve right away.
  9. Garnish and serve: Top with a few whole berries and a mint leaf. Enjoy immediately for the best texture.
