Low Carb Blueberry Cheesecake Dip - Creamy, Fresh, and Easy

Ingredients
  

  • 8 ounces cream cheese, softened (block style, full-fat for best texture)
  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 1/3 cup powdered erythritol or allulose (or your preferred powdered low-carb sweetener), plus more to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest (optional but brightens the flavor)
  • 1 cup fresh blueberries (divided)
  • Pinch of salt
  • Optional garnish: extra blueberries, a few fresh mint leaves, or a sprinkle of crushed unsweetened coconut flakes

Method
 

  1. Soften the cream cheese: Leave the block at room temperature for 30–45 minutes. Soft cream cheese blends smoother and avoids lumps.
  2. Whip the base: In a medium bowl, add the softened cream cheese, Greek yogurt, powdered sweetener, vanilla, lemon juice, lemon zest, and a pinch of salt. Beat with a hand mixer on medium speed until creamy and fluffy, about 2–3 minutes. Taste and adjust sweetness or lemon as needed.
  3. Make a quick blueberry mash: In a small bowl, lightly mash 1/2 cup of the blueberries with a fork. You want some juices and some whole bits. This gives the dip that blueberry cheesecake swirl.
  4. Fold and swirl: Gently fold the mashed blueberries into the cheesecake mixture until you see streaks of purple running through. Don’t fully blend or you’ll lose the pretty marbling. Fold in the remaining 1/2 cup whole blueberries.
  5. Chill (optional but recommended): Cover and refrigerate for 30–60 minutes. Chilling helps the flavors meld and the texture set.
  6. Garnish and serve: Top with a few extra blueberries, a pinch of lemon zest, or a sprig of mint. Serve with low-carb dippers like cucumber rounds, celery sticks, sliced strawberries, almond flour crackers, or small wedges of 90% dark chocolate for a treat.
