Ingredients
  

  • Blueberry filling: 4 cups blueberries (fresh or frozen)
  • 3–4 tablespoons granular erythritol or monk fruit blend (adjust to taste)
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest (optional but brightens the flavor)
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds or 1 teaspoon xanthan gum (to lightly thicken)
  • Pinch of salt
  • Protein crumble topping: 1 cup fine almond flour
  • 1/3 cup vanilla or unflavored whey or plant-based protein powder
  • 1/4 cup coconut flour (adds tenderness and structure)
  • 1/3 cup granular erythritol or monk fruit blend
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed (or coconut oil for dairy-free)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons unsweetened almond milk (as needed for texture)
  • Optional for serving: Unsweetened whipped cream, Greek yogurt, or a low-carb vanilla ice cream

Method
 

  1. Heat the oven: Preheat to 350°F (175°C). Lightly grease an 8x8-inch baking dish or similar.
  2. Mix the berries: In a bowl, toss blueberries with sweetener, lemon juice, lemon zest, vanilla, chia seeds or xanthan gum, and a pinch of salt. Stir well and set aside so it starts to thicken.
  3. Combine dry crumble ingredients: In a separate bowl, whisk almond flour, protein powder, coconut flour, sweetener, baking powder, cinnamon, and salt.
  4. Cut in the fat: Add cold butter cubes to the dry mixture. Use a pastry cutter or your fingers to work it in until it looks like coarse crumbs with pea-size bits.
  5. Add wet ingredients: Whisk the egg and vanilla together. Pour over the crumb mixture and stir. Add almond milk 1 tablespoon at a time until the crumbs hold together when pressed but still look craggy.
  6. Assemble: Pour the blueberry mixture into the baking dish and spread evenly. Sprinkle the crumble over the top in an even layer, leaving a few gaps for steam.
  7. Bake: Place on the center rack and bake 28–35 minutes, until the topping is golden and the berries are bubbling around the edges.
  8. Rest: Let the cobbler sit 10–15 minutes to set the juices. This helps the filling thicken and the crumble firm up.
  9. Serve: Enjoy warm as-is, or add a dollop of whipped cream, Greek yogurt, or a scoop of low-carb ice cream.
