Prep your equipment. Grab a high-speed blender or food processor and a freezer-safe container with a lid. If using frozen blueberries, there’s no need to thaw.
Blend the base. Add cottage cheese, sweetener, vanilla, lemon zest, lemon juice, and salt to the blender.
If using heavy cream or almond milk, add it now. Blend until completely smooth and creamy, scraping the sides as needed.
Add blueberries. Toss in the blueberries and blend again. For a smooth texture, blend fully.
For a ripple effect, pulse a few times so some blueberry pieces remain.
Taste and adjust. Check sweetness and acidity. Add a little more sweetener or lemon juice if needed. Remember, flavors mute slightly when frozen, so aim a touch sweeter than you’d eat unfrozen.
Improve scoopability (optional). Stir in vodka or vegetable glycerin.
This helps reduce iciness and keeps the ice cream easier to scoop from the freezer.
Freeze. Pour into your container and smooth the top. Press a piece of parchment directly onto the surface to limit ice crystals. Seal with the lid and freeze for 3–4 hours for soft-serve or 5–6 hours for a firmer scoop.
Serve. If very firm, let it sit at room temperature for 5–10 minutes before scooping.
Use a warm scoop for clean, easy servings.
