Ingredients
  

  • Full-fat or 2% cottage cheese (16 ounces) — choose a creamy, good-quality brand
  • Fresh blueberries (1 to 1½ cups), plus extra for topping
  • Low-carb sweetener (2–4 tablespoons), such as allulose, erythritol, or monk fruit
  • Pure vanilla extract (1 teaspoon)
  • Lemon zest (optional, ½ teaspoon) for brightness
  • Pinch of salt to round out the flavor
  • Unsweetened almond milk or water (1–3 tablespoons) if needed to thin
  • Chia seeds (optional, 1–2 teaspoons) for a thicker, pudding-like set
  • Whipped cream or Greek yogurt (optional) for topping
  • Toasted sliced almonds or coconut flakes (optional) for crunch

Method
 

  1. Blend the base. Add cottage cheese, sweetener, vanilla, lemon zest (if using), and a pinch of salt to a high-speed blender or food processor. Blend on high until completely smooth and creamy, 30–60 seconds. Scrape down the sides and blend again. If it’s too thick, add 1–2 tablespoons almond milk or water to loosen slightly.
  2. Taste and adjust. Check sweetness and acidity. Add more sweetener or a touch of lemon zest if you want a brighter flavor. The mixture should taste like a lightly sweet cheesecake base.
  3. Fold in blueberries. Reserve a handful for topping. Gently stir most of the blueberries into the blended cottage cheese so they stay whole and juicy. For a purple swirl, pulse the blender once or twice after folding—don’t overdo it.
  4. Optional thickening. For a thicker, more pudding-like set, stir in 1–2 teaspoons chia seeds. Let the mixture rest for 5–10 minutes so the seeds can absorb liquid, then stir again.
  5. Portion into cups. Spoon the mixture into 4–6 small jars or ramekins. Top with extra blueberries. If you like crunch, add a sprinkle of toasted almonds or coconut just before serving.
  6. Chill. Refrigerate for at least 30 minutes to let flavors meld and the texture set. Longer is even better, especially if you used chia seeds.
  7. Serve. Enjoy as is, or finish with a dollop of whipped cream or a spoonful of Greek yogurt. A light dusting of lemon zest on top adds a nice touch.
