Low Carb Blueberry Protein Brownies - Rich, Fudgy, and Berry-Packed

Ingredients
  

  • Almond flour (fine blanched) – for a tender, low-carb crumb
  • Unsweetened cocoa powder – natural or Dutch-processed
  • Chocolate or vanilla whey protein powder – or a low-carb plant-based blend
  • Granular erythritol/monk fruit blend – or your preferred 1:1 sugar substitute
  • Baking powder – to lift the batter slightly
  • Salt – just a pinch to balance flavors
  • Eggs – room temperature for best texture
  • Unsweetened almond milk – or any low-carb milk alternative
  • Melted coconut oil or butter – for richness and moisture
  • Vanilla extract – rounds out the chocolate
  • Optional add-ins: sugar-free chocolate chips, lemon zest, cinnamon, or chopped nuts

Method
 

  1. Prep your pan and oven: Heat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment, leaving overhang for easy lifting. Lightly grease the sides.
  2. Mix dry ingredients: In a large bowl, whisk almond flour, cocoa powder, protein powder, sweetener, baking powder, and salt until no clumps remain.
  3. Whisk wet ingredients: In a separate bowl, beat the eggs, almond milk, melted coconut oil or butter, and vanilla until smooth.
  4. Combine: Pour the wet mixture into the dry. Stir gently with a spatula until just combined. The batter will be thick but spreadable.
  5. Fold in blueberries: Gently fold in blueberries. If using frozen, toss them in a teaspoon of almond flour first so they don’t sink or streak.
  6. Spread and top: Scrape batter into the pan and smooth the top. Sprinkle a few extra blueberries or sugar-free chocolate chips over the surface if you like.
  7. Bake: Bake 18–24 minutes, until the center is set but still slightly soft. A toothpick should come out with moist crumbs, not wet batter.
  8. Cool completely: Let the brownies cool in the pan for at least 20–30 minutes. Lift out using the parchment and cool another 15 minutes before slicing. This step helps them firm up and stay fudgy.
  9. Slice and enjoy: Cut into 9–12 squares. The smaller the squares, the lower the carbs per serving.
