Ingredients
  

  • Blueberries: 3 cups fresh or frozen (no need to thaw; if frozen, add 1 extra teaspoon thickener).
  • Cottage cheese: 1 1/2 cups, full-fat or 2% for best texture.
  • Granulated low-carb sweetener: 1/3 cup for berries and 2 tablespoons for topping (erythritol, allulose, or monk fruit blend).
  • Almond flour: 3/4 cup, finely ground.
  • Pecans or walnuts: 1/2 cup, chopped.
  • Unsweetened shredded coconut (optional): 2 tablespoons for extra crunch.
  • Butter: 4 tablespoons, cold and cut into small cubes (or coconut oil for dairy-light).
  • Vanilla extract: 1 teaspoon.
  • Lemon zest: 1 teaspoon, plus 1 tablespoon lemon juice.
  • Cinnamon: 1/2 teaspoon.
  • Pinch of salt.
  • Thickener (optional): 1–2 teaspoons arrowroot or 1/2 teaspoon xanthan gum if your berries are very juicy.
  • Nonstick spray or a little butter for greasing the dish.

Method
 

  1. Preheat the oven: Set to 350°F (175°C). Lightly grease an 8x8-inch baking dish or similar.
  2. Mix the berries: In a bowl, combine blueberries, 1/3 cup sweetener, lemon zest, lemon juice, and vanilla. If your berries are very juicy, sprinkle in your chosen thickener and toss to coat.
  3. Layer the cottage cheese: Spread the cottage cheese evenly on the bottom of the baking dish. It should form a thin, creamy layer.
  4. Add the berries: Spoon the blueberry mixture over the cottage cheese, spreading it evenly.
  5. Make the crumble topping: In another bowl, stir together almond flour, chopped nuts, optional coconut, cinnamon, remaining 2 tablespoons sweetener, and a pinch of salt. Add the cold butter cubes and pinch or rub them into the dry mix with your fingers until it forms coarse crumbs.
  6. Top and bake: Sprinkle the crumble evenly over the blueberries. Bake for 25–30 minutes, or until the topping is golden and the berries are bubbling around the edges.
  7. Rest before serving: Let the crumble sit for 10–15 minutes. This helps the juices thicken and the layers set.
  8. Serve: Enjoy warm as-is, or add a dollop of unsweetened whipped cream or a spoonful of plain Greek yogurt.
